Western Culinary Schools and the Local Food Movement

 

The local food movement is growing rapidly. This movement is founded on the idea that we should get our food from local farmers rather than having it shipped in from other locations. The benefits of this include that the food is healthier and the local economy grows as a result.

The reason that this movement is growing right now is because the cost of gas is driving up the cost of shipping food which means that non-local food is getting too expensive. People are taking an interest in ways to reduce costs and the local food movement is one that makes sense.

Despite this new surge in interest, the local food movement isn’t new. Cutting edge restaurants and communities have been supporting it for years. Even schools have been involved; for example, students at Western Culinary Schools in Portland rely heavily on locally produced food in their classrooms.

As the movement grows, it is likely that we will see more schools and other businesses getting in on the trend. Those places that helped launch it will be the ones to thank!
