What I Learned from California Culinary Academy

I have never attended California Culinary Academy (or any other culinary arts program, for that matter). But I had an opportunity to speak with several people who have worked and studied at this institution and I came away from the discussion with more of an education than I might have expected.
Here are some of the things that I learned without even attending the Culinary Academy of California:
- It’s hard work. The first thing that came up was the fact that a cooking school is a lot of fun but it also requires a lot of hard work. There are tests and presentations just like at any other school. Of course, they say that if you can’t handle the heat, you should get out of the kitchen.
- Cooking is an art. The school draws in people who have a lot of creative aspects to their personalities and that comes through in the presentation of their food.
- Chefs aren’t the only people who attend culinary schools. Sure, you learn to cook. But graduates of these schools also learn restaurant management skills and other things that allow them to get a variety of different jobs.
- There are cliques and competition but there’s also camaraderie. Cooking creates connections.
Before meeting the people who had attended this school, I held some preconceived notions about what it must be like to go there. What I learned was that I didn’t know anything at all!
